Beet radish sabji



I tried this new vegetable and came out good.I wanted to share it with you all
Ingredients:
1 can sliced beets(chopped into 1/2 inch cubes)
1 small white radish(chopped into 1/2 inch cubes)
1 green chilli
few curry leaves
1/2 tsp mustard seeds and hing
salt to taste
1/2 tsp sugar 1/2 tsp garam masala
Garnish with fresh coconut

method:
heat oil in a nonstick pan and add mustard seeds and hing.After that add finely chopped green chilli and curry leaves.then add the chopped beet and chopped radish and the spices and saute for 5 mins.Cover and cook till done and garnish with fresh grated coconut.

Roasted Veggies


Hi all
I roasted some veggies today and they looked good so decided to share a picture with you all.
method:
1 orange bell pepper
1 yellow bell pepper
1 pack button mushrooms
1 cup baby carrots
1 medium onions
Chop everything into large pieces and marinate with olive oil,dried basil leaves ,salt and pepper for 2 hrs.Broil on high for 15 mins.Serve hot with your favourite pasta.enjoy!!!
you can add other veggies like zuchinni,red bellpepper,portabella mushrooms etc

Leftover rice


I like to spice up left over rice in different ways.Today I made a quick pulao with leftover rice from dinner yesterday.
Ingredients:
1 1/2 cup cooked rice
1/2 cup green beans finely cut
1/2 cup carrots finely cut
1/2 cup onion finely chopped
1/2 tsp pulao masala
salt to taste
1 small green chilly finely chopped
olive oil for tempering
1/2 tsp cumin seeds and hing

method:
Heat olive oil.Add cumin seeds and hing.
Then add all veggies and chilly and masala and saute till light golden brown. Add salt and cover and let it steam for 4-5 mins.
Serve hot with raita
enjoy!!!

Baigan Bharta



My friend makes a very nice baigan bharta and I told her to teach me how to make it.Here is the recipe....
Ingredients:

1 big eggplant
1 large onion
2 medium tomatoes(pureed)
6 cloves of garlic
2 inch piece of ginger
1 tsp chilli pd
1 tsp coriander-cumin pd
1 tsp garma masala
1/2 tsp turmeric
salt to taste
1 tsp lemon juice
1/2 tsp cumin seeds

method:
Roast eggplant till very soft and then mash it very well.
Chop the onions and ginger garlic finely in a food chopper.heat oil in a pan and add cumin seeds. Then add onion and ginger-garlic chopped.saute till golden brown and then add pureed tomatoes and saute till oil leaves sides. Mix all spices in 1/4 cup water and add to pan.saute for atleast 10 mins.
once done add lemon juice and mashed eggplant and mix well and cover and cook for another 10 mins.garnish with chopped coriander leaves.Enjoy!!!

CORNFLAKES CHIVDA




I made this chivda for Diwali this year and as always its very crunchy and yummy. My son loves it too as he feels he is eating cereal.It very easy to makes and the ingredients used are usually always at home.The recipe will follow soon........

Ingredients:
4 cups plain cornflakes
1 tsp coriander-cumin pd
1 cup roasted peanuts and cashews
2 tsp roasted sesame seeds
1/4 cup golden raisins
salt to taste
2 tsp sugar
10-12 curry leaves
2-3 green chillies cut into half
1/2 tsp mustard seeds
1/2 tsp hing

Method:
Heat 3 tbsp of oil.Add mustard seeds and hing and when they splutter add the curry leaves,corainder-cumin pd and chillies.Then add the roasted peanuts,cashews and sesame seeds.Then add cornflakes,raisins,sugar and salt.Toss well till the cornflakes are well covered with the mixture.
You can add red chilli pd instead of green chillies for a different taste.
Enjoy this crunchy delight!!!!!

HAPPY DIWALI TO YOU ALL



DIWALI IS CALLED FESTIVAL OF LIGHTS.
In Indian cultures, all guests and visitors occupy a very special place, and a rangoli is an expression of this warm hospitality. People visit eachother and share sweets called Faral which includes ladoos,chivdas,barfis etc.There are diyas all over the house and lanterns are put up in front of all houses to celebrate the festival.
It is a magical time for everyone to share food and have fun with family and friends.Hope this Diwali brings happiness and joy to everyone.

Shrimp Pulao




I made this today for dinner and turned out very good so I decided to share it with you all....

Ingredients:
1 1/2 cup basmati rice -washed and drained
1 small onion
1 medium tomato
1 tsp ginger-garlic paste
1 tsp coriander-cumin pd
1/2 tsp turmeric pd
1 tsp garam masala
salt to taste
1/2 or 1 tsp chilli pd
1 cup shrimp cleaned and deveined
green chillies and corainder leaves for garnish (optional)
3 cups hot water

Method:
Heat oil in a nonstick pan and add onions .Saute for 2-3 mins and then add the ginger-garlic paste and the tomatoes.Saute for another 5 to 8 mins.Then add all the spices and the shrimp.Mix well and cook for 5-8 mins more. Then add rice and mix again.Now add the hot water and cover and cook on medium flame till done.Garnish with chillies and coriander leaves and serve hot with raita and pickle.

Green pulao



I made this pulao for my friends this weekend and it came out really good. the recipe follows.....

Ingredients:
1 1/2 cups washed and chopped spinach leaves
1 cup peas
1 small onion finely chopped
2 cloves chopped garlic
2 tsps any pulao masala pd
salt to taste and oil for tempering
1/2tsp cumin seeds
1/4 tsp hing
1/4 tsp turmeric pd
1 1/2 cups basmati rice

method:
heat oil in deep non stick pan and add cumin seeds and hing.Then add onions and garlic.Saute for 5 mins and then add spinach and peas. Saute for another 5 mins and add pulao masala,turmeric pd and salt.Stir well and then add washed and drained rice.mix it well and add 3 cups water and bring to boil and cover and cook till done.
Serve with yogurt raita or salad.

Egg-spinach bhurji


Ingredients:
1 medium onion finely chopped
1 1/2 cups spinach finely chopped
2 small garlic cloves chopped
2 eggs (large)
1/2 tsp haldi
1/2 tsp coriander-cumin pd
1 green chilli finely chopped(you can use 2 chillies if you want spicy)
1 tbsp oil
1/2 tsp cumin seeds
1/4 tsp hing
salt to taste

method:
Heat oil.Add cumin seeds and hing.
Then add the onions,garlic and green chillies. Saute till soft and then add spinach and all the spices.Saute for 5 more mins or till all the water from spinach is evaporated and the mixture is dry.
lastly add the eggs to the mixture one by one and mix them well till well cooked.Serve hot with toasted bread or rotis.enjoy!!!!

Memories


This wheat cake is my sister's recipe and my 5yr old son decided to help me make it so with a few ups and downs we made it and I just wanted to share the picture with you all.

Chicken kheema kebabs


We love minced chicken and this time I purchased it from the store thinking that I would make something different.So I entered the kitchen thinking of making mincedchicken and potato pattice.Then this idea of kebabs suddenly came up in my mind and as I had all the ingredients on hand I decided to go ahead with it.I have seen meatballs made on television and in cooking books so I just decided to try a simple version.The kebabs came out really good and I was happy and my husband enjoyed eating the kebabs with his evening tea.The recipe follows.........

Ingredients:
!/2 lb minced chicken
1/2 cup breadcrumbs
1 medium onion finely chopped
1 tsp corainder cumin pd
1 tbsp ricotta cheese(fatfree)
1 tsp chilli pd
1/2 tsp turmeric pd
1/2 tsp garlic pd
salt to taste
1/2 cup chopped cilantro(optional)
1 tbsp olive oil

Method:
Preheat oven to 350F and cover a baking sheet with aluminium foil.
Mix all the above ingredients together till well mixed. Make small round or oval shaped meatballs or use a spoon to scoop each meatball.Cook at 350F for 35-40 mins or till done.
Serve hot with your favourite dipping sauce or ketchup.
